Pizza Bubble Bread

This is one of my kids favorite lunches to make. They love to get their hands dirty.

2-3 tubes biscuits( the old small ones)
1 can pizza sauce
Grated cheese
Topping optional










Cut biscuits in quarters, dip in pizza sauce, arrange on pan,








sprinkle with cheese and other toppings if wanted. bake 350' for 15-18 minutes, enjoy

Funeral potatoes

Only in Utah would a delicious side dish be called after a funeral but it is. Another name is sour cream potatoes. It is one of my favorites.

8 med potatoes, skinned and grated.

Heat together
4 T butter
1 C cream of chicken soup
1 pt sour cream
1/4 C grated onion
1/2 C grated cheese

Mix all ingredients together and place in 9x13 pan, top with grated cheese.Bake 350* for 30 minutes

Fondant

I love to watch cake decorating shows and see them work with fondant. So yesterday I tried it. I loved working with it. The cake was simple but very cute. All white with a pink border and flowers on top. I will definitely use it again, maybe I will flavor it next time.

100 % Whole Wheat Waffles

You know I love my man if I will make waffles from scratch, that take multiple bowls. But they are good.

100% Whole Wheat Waffles

2 c ground whole wheat flour
3 1/2 tsp baking powder
1/2 tsp Salt
2 egg yolks
2 c Rice milk
3/4 c Applesauce/safflower oil(use half of each to make the 3/4 cup)
2 egg whites

In a large mixing bowl mix Flour, baking powder and salt. in small bowl beat eggs with a fork. Beat in rice milk and applesauce/safflower oil. Add to flour mixture and mix until slightly lumpy.
In a small mixing bowl beat egg whites with mixer till stiff peaks form. Gently fold in egg whites. Do not over mix.
Pour batter in to hot greased waffle Iron.
Makes 6-7 Belgian waffles

I enjoy these also and the kids will eat them which is a big plus. They are great with fresh sliced strawberry.

Mango Salsa

I have been in the mood for this so I thought I would post it. Sorry the amounts aren't exact It is just to taste.

Mango pico de gallo

3 or 4 large mangoes or 3 large and 2 small (ripe)
3 large red tomatoes
1 red onion
cilantro
1-2 Serrano peppers
1-2cucumber
lemon
salt

Dice mangoes, Serrano, onions, tomatoes, cucumber and cilantro. Mix all ingredients in a a bowl, add lemon juice and salt to taste. Chill for an hour or overnight.


For salsa mango you can vary by adding other fruits such as pineapples or peaches. Experiment and have fun with it. I love to add pineapple.

Strawberry Pie

As I went through my recipes this morning to figure out which one to post I realized I have everything to make this, and will today.

Strawberry Pie

1 pre-cooked pie crust cooled
8 oz cream cheese (softened)
1 T sugar
1/4 tsp vanilla
5 c sliced strawberries
3/4 c sugar
1/4 tsp salt
1 c water
3 heaping T corn starch
red food coloring

Mix cream cheese, T sugar and vanilla until smooth, spread in bottom of pie crust

mix sugar,salt,water,cornstarch,and red food coloring unlit smooth, heat until thick, mix with sliced strawberries, place in pie crust over cream cheese, chill in fridge for 2 hours to set.

Favorite Friday Cheesy Apples

Today recipe was first brought into my house when I had my first little boy, by a wonderful neighbor. It has been a family favorite for almost 8 years now. It is great because it works for both a breakfast and a desert and I know people who serve it as a side dish.

Cheesy Apples

8 apples peeled cored and sliced
1/2 lb velveta cheese cubed
1 C sugar
3/4 c flour
1/2 c butter

Place Apples in a 9x9 pan
Mix remaining ingredients until soft dough forms, easily done with a mixer.
spoon topping over apples, Bake at 370* for 45 minutes or until golden brown.
Can be served right from the oven or cooled and is great with Ice cream.

I must admit that I have never made a single batch.

Pumpkin Spice Cookies

While I am away from home I decided to put a favorite recipe that I can remember without my cookbook. It is also a great recipe to make with kids, because it is so simple.

Pumpkin spice cookies

1 spice cake mix
1 14 oz can pumpkin

How easy is that. Optional ingredients are one egg, and my kids love to add chocolate chips.

Mix ingredients together and drop dough on a cookie sheet. bake at 350 for 15-20 mins.

Favorite Friday

I will be doing a favorite recipe each Friday, or one that I have tried recently.

This year my church doesn't start until 1pm and lasts about 3 hours. Needless to say we are all hungry when we get home. I have found that crock pot meals are wonderful. I did need to go get a new one, my old one was small and old. I love my new one. It can hold 3times what the old one could and with a big family that has been great.



Now on to tadays recipe

Tortilla Soup

3-4 Chicken breasts
2 can 14 oz black beans or 1 can each black beans and kidney beans
2 can Mexican stewed tomatoes
1 can tomato sauce 14 oz
1 c salsa
1 can chopped chilies
Tortilla chips
Cheese

Combine first 6 ingredients in crook pot on high for 4 hours or low 8 hours

Shred chicken before serving
Serve with chips and cheese
You can also drain juice and make chicken tacos.

With the size of my crew I have to double this.
